Preheat Oven to 350 degrees. Then prepare your cookie sheet with parchment paper.
Combine pumpkin, sugar, vegetable oil, vanilla and egg in a large bowl. Mix until smooth.
In a separate bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ginger, nutmeg, clove, and salt.
Combine the flour mixture by adding it into the pumpkin mixture. Mix just until most of the flour mixture is combined (I use the rubber spatula to mix). Note: Make sure not to over mix since we still have to add the chocolate chips.
Use a tablespoon, ice cream/cookie scoop to place the cookies 2 inches apart of the cookie tray.
Bake for 10-13 minutes. You can check to see if they are done by using a tooth pick to poke the cookies, if it comes out clean it's done. If not continue to cook longer.
Once done, place on a cooling rack then ENJOY!
