Ingredients
- 1-2 Baking Pumpkins
Instructions
- Preheat oven to 350°F
- Cut the pumpkin(s) in half and scoop out the seeds and pulp (you can save the seeds in a bowl and bake them later or toss).
- Place pumpkins on a baking sheet (I prefer cut side down) and cook for about 45 minutes.
- Pierce with a fork to check if they are tender. Once tender and a light golden brown, they are done cooking.
- Wait for the pumpkin to cool down a little then peel the skin away from the pumpkins and cut into chunks
- Use a food processor (or a high-quality blender) and blend/pulse until smooth. If your pumpkin seems dry add a tablespoon of water.
- Use immediately or freeze!
