Pumpkin Puree

Ingredients
  

  • 1-2 Baking Pumpkins

Instructions
 

  • Preheat oven to 350°F
  • Cut the pumpkin(s) in half and scoop out the seeds and pulp (you can save the seeds in a bowl and bake them later or toss).
  • Place pumpkins on a baking sheet (I prefer cut side down) and cook for about 45 minutes.
  • Pierce with a fork to check if they are tender. Once tender and a light golden brown, they are done cooking.
  • Wait for the pumpkin to cool down a little then peel the skin away from the pumpkins and cut into chunks
  • Use a food processor (or a high-quality blender) and blend/pulse until smooth. If your pumpkin seems dry add a tablespoon of water.
  • Use immediately or freeze!
