Ingredients
  

  • 1 cup Pumpkin Puree
  • ½ cup Pyure Sugar Or 1 Cup Granulated Suagar
  • ½ cup Olive oil (or vegetable oil)
  • 1 Large Egg
  • 1 tbsp Pure Vanilla Extract
  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • ½ tsp Ginger
  • ¼ tsp Nutmeg
  • ¼ tsp Cloves
  • ½ tsp Salt (fine salt preferred)
  • 1-2 cups Chocolate Chips (I use a mixture of dark and semi-sweet mini chocolate chips - but you can use whatever style!)

Instructions
 

  • Preheat Oven to 350 degrees. Then prepare your cookie sheet with parchment paper.
  • Combine pumpkin, sugar, vegetable oil, vanilla and egg in a large bowl. Mix until smooth.
  • In a separate bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ginger, nutmeg, clove, and salt.
  • Combine the flour mixture by adding it into the pumpkin mixture. Mix just until most of the flour mixture is combined (I use the rubber spatula to mix). Note: Make sure not to over mix since we still have to add the chocolate chips.
  • Use a tablespoon, ice cream/cookie scoop to place the cookies 2 inches apart of the cookie tray.
  • Bake for 10-13 minutes. You can check to see if they are done by using a tooth pick to poke the cookies, if it comes out clean it's done. If not continue to cook longer.
  • Once done, place on a cooling rack then ENJOY!
